The Raku Table | Nasu Dengaku

Nasu Dengaku

Prep time: 5 min | Cook time: 20 min

Ingredients

1 eggplant

Dengaku glaze

4 tbsp miso

2 tbsp mirin

2 tbsp sake

1 tbsp sugar

2 tbsp water

Garnish

shichimi


Instructions

01. Halve your eggplant lengthwise. Score the flesh side. Rub some oil on both sides and gently season with salt.

02. Bake for 20 minutes @ 200C

03. Mix your Dengaku ingredients in a pot. Bring to a simmer. Simmer for a couple of minutes.

04. Spread sauce over the scored side of your eggplant halves. Return to oven on grill setting. Grill until beautifully caramelised.

05. Spice it up with some shichimi
