When it comes to Padron season come summer, I usually wipe out Waitrose of their stock, selfishly wanting to live off these for as long as I can. It’s such a simple, yet moreish.

Ingredients

handful Padron peppers

oil

To Serve:

lemon wedge

sea salt flakes

Optional extras:

shichimi

katsuobushi


Instructions

01. Heat pan until smoking. Cook Padron peppers until blistered. Add a little bit of oil. Continue cooking until slightly wilted.

02. Season with salt flakes. Choose optional extras if desired. Serve.
