Gut-Healing Marshmallows

If you struggle with bloating like I do, you may be on your own journey of healing and trying to figure out what causes it. This gut-healing marshmallow recipe could make a great (very yummy) addition to that healing process. If it tickles your fancy, read on for the recipe 😜


Whilst I’m still on this journey, I hope that by sharing in real time what I uncover in the process can help you.

The first in a potential gut-health series, this recipe is one that I’m currently making on repeat. I found this recipe a few months ago from Ossa and @elsa.grace.evelyn and have been making and eating this every day with my morning ritual for the last few months.

I've adapted it to my own tastes and current gut-healing needs in making it FODMAP-friendly by replacing honey with maple syrup and adding shit-tonnes of cinnamon. 😜


Ingredients

3 organic egg whites (I make a carbonara or sabayon with the remaining egg yolks for lunch the same day if I can)

2 tbsp Ossa Organic pasture-raised gelatine

3-6 tbsp organic maple syrup or honey (adjust according to taste)

Pinch of pink Himalayan salt

1/2 tsp vanilla essence


Optional extras:

a sprinkling of Sea salt / Himalayan pink salt

cinnamon

Instructions

01. Bloom* gelatine in 4 tbsp filtered water; set aside.

02. Whisk egg whites until fluffy (in my kitchen aid, about 1 min. Might need longer, 2-3 mins with hand whisk). Don’t over-whisk. At this stage it’s better to under-whisk just in case.

03. Add maple syrup, salt, and vanilla; combine with a whisk/kitchen aid

04. Gently stove-heat bloomed gelatine in a pan until dissolved. Add to the bowl.

05. Whisk until the mixture is foamy and cloud-like and has soft, silk-like peaks (1 min in kitchen aid, 2-3 with hand whisk). Don’t over whisk. We don’t want it to start separating.

05. Pour into a ceramic/glass dish. (I put mine straight into a glass tupperware)

06. Set in the fridge for at least 2 hours.

07. Cut as big or as little as you’d like. Maybe you want to go to for the small marshamllow Swiss Alps feel, or you want a chunky S’mores vibe. I like mine big and chunky x 2.

Enjoy on top of your chosen hot drink (like my peppermint hot choc or bloat latte by Arrae). I like to add a sprinkling of sea salt, a drizzle of EVOO, or grated dark 70% chocolate on top of my chose drink depending on mood.
